Portugese Chicken

Opened a bottle of white wine on New Year’s Eve for the countdown. Unfortunately I had kept the wine a wee bit too long and it had passed its optimum shelf life, so it wasn’t exactly the best tasting wine to drink anymore. Used the rest of it to cook lunch on New Year’s Day instead.

First lunch of 2009… Portugese Chicken:

Here are the steps to make Portugese Chicken:

Ingredients:

  • 2 chicken legs
  • 2 tablespoon butter
  • 8 cloves garlic, peeled
  • 2 shallots, diced
  • 1 tablespoon all-purpose flour
  • 1 teaspoon salt (or to taste)
  • 1 teaspoon pepper (or to taste)
  • 1 cup milk/light cream
  • 1 1/2 cups chicken stock (or as needed)
  • 1 cup white wine

Browned chicken

Melt butter in a skillet. Add chicken and cook until nicely brown on both sides

Transfer to a pot. Add wine, garlic and onions in a pot

Transfer to a pot. Add chicken stock, wine, garlic and onions. Use enough stock so the chicken is two thirds covered by liquid. Sprinkle flour on top

Add milk or light cream

Simmer for 40-45 mins until chicken is cooked. Then remove the chicken and continue boiling the liquid until reduced to 1.5 cups

Cooked

Whisk milk or light cream into the liquid, breaking up the garlic cloves as much as you can. Return chicken to the liquid and heat through
